Model Matthew joined the Good Will Hunting star and her three-year-old son Henry on a day out at the Malibu Fair yesterday.
And the couple looked like they were having a great time, holding hands while strolling through the attractions.
Looking casual in a black long sleeved top, jeans and orange trainers, Minnie carried her growing little boy on her hip, while Matthew walked alongside.
At 30, Matthew is 11 years younger than the actress.
The model may be familiar to some Britney Spears fans after locking lips with the singer in the video for her 2004 track, Toxic.
He has had rumoured dalliances with Halle Berry, Selma Blair, Jennifer Aniston and Kate Winslet over the years, while Minnie has been linked with John Cusack and Matt Damon in the past.
However, she has never revealed the name of baby Henry's father.
When quizzed about the father's identity by Jay Leno before the birth in September 2008, she said: 'I figure, I'm the public person, and he can stay private.'
Some media outlets identified him as musician Craig Zolezzi, however she never confirmed the rumours.
The star recently revealed that she is keen to have more children, but not on her own.
'Henry's dad and I probably wouldn't have any more together, but I would love to have more.
'But I couldn't do another one without a partner; I couldn't do two as a single mum, I really couldn't. It would be too much.'
Minnie has two films coming out later this year, Goats, with Keri Russell, Vera Farmiga and David Duchovny, and Hunky Dory, in which she appears alongside a cast of relative unknowns.
